Occasionally, an oyster’s seal will hold. It’s helpful to tap the oyster at the hinge and the seal opens. If the oyster only opens a smidge, insert a fork in between the shells and lift. The oyster is already completely separated from the shell and can be consumed raw or on the half shell baked in any variety.
Keep refrigerated. We recommend you eat them within a week, but when kept refrigerated they are good 8-10 days.
